There is no such thing as enough food in the area. I love to see food trucks popping up all over the place in Twin Falls and surrounding areas. We are getting another food truck with delicious Mexican food.

The truck is called Marigold and it is going to have some great stuff on the menu, in my opinion anyway. The owner is Arturo Salas and he told us that he has experience mostly with fine dining and that this food truck will focus on elevated Mexican food.

On the menu, there will be tacos, of course, like Birria, Asada, Chicharron, Tacos de Papa, and a Chef's taco. They will have a specialty menu as well complete with Birria French Dips, Quesabirria, Huevos Rancheros, Arepas, and savory empanadas! I am all about the empanadas.

One of the other things that are going to make them different is they will be serving fresh churros with different flavors. One of those flavors is Strawberries and creme. I definitely need these in my life.

They are planning on opening up by the end of the month barring any complications. There has been some delays to other businesses around the area so I am hoping the end of the month is definitely going to happen.

I haven't been able to find more information online about them, hopefully, they will have a Facebook page and website so we can follow their progress. We will have more information as it becomes available.
